1.Cashew Chicken Salad


ingredients:
  • 2 cups cooked, shredded chicken
  • 3/4 cup mayonnaise
  • 1/3 cup sweet pickle relish
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped celery
  • 1 cup halved red grapes
  • 1/4 cashew halves & pieces
  • 1 tsp. black pepper
  • 1 tsp. Cavender’s Greek Seasoning
  • 1 tsp. dried oregano
  • 1/2 tsp. crushed red pepper
  • 1/4 tsp. salt

2.Maple-Pecan Crusted Chicken Salad


Ingredients:
  • 1/2 cup pecan pieces
  • 1/2 cup panko bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1lb chicken breasts (3-4 chicken breasts)
  • 3 Tablespoons real maple syrup
  • 1 Tablespoon Dijon mustard
  • 9oz mixed greens
  • 2 red apples, chopped
  • 1/3 cup dried cranberries
  • 1/3 cup feta cheese crumbles (or bleu cheese crumbles)

3.Chinese Chicken Salad


ingredients:
  • 1/2 head cabbage, sliced thinly
  • 1/2 head green lettuce, sliced thinly
  • 1 C. fresh spinach leaves, sliced thinly
  • 1/2 C. chives, chopped into small pieces
  • 1 C. cilantro, chopped
  • 2 grilled chicken breasts, diced
  • 1 pkg. Top Ramen noodles (discard seasoning packet)
  • 1/2 C. sliced or slivered almonds
  • 1/4 C. sesame seeds
  • snap peas (optional)
  • broccoli florets (optional)

4.Lighter Chinese Chicken Salad


Salad Ingredients:
  • 2 boneless skinless chicken breasts
  • 3 Tbsp. soy sauce
  • 2 Tbsp. rice wine vinegar
  • salt and pepper
  • 2 Tbsp. olive oil
  • 1 head Romaine lettuce, shredded
  • 4 cups shredded red cabbage
  • 1 cup edamame
  • 2/3 cup shredded carrots
  • 1/2 cup chow mein noodles
  • 1/4 cup sliced almonds, toasted
  • sesame ginger vinaigrette (see ingrediente below)

5.Guacamole Chicken Salad


Ingredients
  • 2 1/2 medium avocados, peeled and pitted
  • 1 lime, zest & juice
  • small handful fresh cilantro
  • 3 cloves garlic, finely chopped
  • 1/2 jalapeno, finely chopped (remove stems and heat for less heat)
  • 1 tsp cumin
  • generous pinch each salt and pepper
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup dried cranberries (optional, but recommended)
  • 10-12 oz cooked and shredded chicken (I used one rotisserie)
